Basic Miso Soup
When I first embarked on my thyroid healing journey I learned that there were foods and nutrients that my body was asking for that I never would have thought to use in my kitchen. Miso soup is one of those foods that helped heal my Thyroid condition, and is still in rotation in my kitchen today.
This soup has many health benefits. The kelp seaweed makes it rich in iodine which supports the thyroid and endocrine system. It’s also highly beneficial for digestive health because it is full of probiotics and the mucilaginous fiber of the seaweed can help heal the gut lining. It also helps with detoxifying the body from heavy metals like mercury and lead. Kelp has algin which binds with heavy metals and carries it out of the body.
When I was healing from my thyroid condition I would have miso soup a few times a week amongst other seafood, and this helped increase my iodine levels and lower my heavy metal load.
Best part of all, it’s savory flavor would satisfy my salty cravings. Enjoy!
Ingredients
5-6 cups water (can use fish or veggie stock)
8 ounces extra firm tofu, cubed
3-4 inches of dried wild atlantic kelp (soaked in cool water and sliced thin or squares)
3 scallions, minced
4 tbsp. sweet white or red miso
Method
Bring stock, tofu, and kelp to a boil.
Reduce heat and simmer 2 minutes.
Dilute miso in a small amount of warm water and add to the pot.
Continue cooking 2-3 minutes.
Garnish with freszh scallions.
